Plate
The outside skirt is the diaphragm muscle, running along the plate under the ribs. It's loose-grained and generously marbled, which is why it eats richer and more tender than a cut this thin has any right to. This is the steak that made fajitas famous, and demand got so far ahead of supply that restaurants started substituting the inside skirt.
