All that marbling wants heat to melt into the meat, which is why a ribeye eats best at medium-rare. Salt it an hour ahead, get an oiled cast iron screaming hot, and sear it 3-4 minutes a side. Pull it at 120F and rest it 10 minutes, and it'll carry to a perfect 130.

On the grill, that same marbling drips and flares, so bank the coals to one side, or leave a burner off if you're on gas, and you'll have a cool zone to move to when the flames jump.

The ribeye also loves a reverse sear. Bring it up slow in a 225F oven, grill or smoker until the center reads 110F, then finish it with a hard sear in oiled cast iron, spooning butter, garlic, and thyme or rosemary over the top. It cooks evenly from edge to edge and leaves you a crust that's savory and nutty and worth the extra twenty minutes.

Rib

The ribeye is cut from the rib primal - the upper back, just behind the shoulder, and the richest-marbled section of the steer. That marbling is what gives the cut its deep flavor and buttery texture. As a boneless steak it's a modern standard; for most of its history this meat came to the table on the bone as a rib roast.
