How to cook
Each one wants its own heat:
Standing Rib Roast: rub it with garlic, rosemary and coarse salt the night before. Roast at 250F until the center reads 120F, about 15-20 minutes a pound, then turn the heat up hot for ten minutes to crackle the crust. Rest it 20-30 minutes and carve.
Big Daddy Hamburgers: sear hard, 4-5 minutes a side for medium, one flip, and never press them. Rest a couple minutes before the bun.
Ground Beef: brown it hard and give it room. Leave it loose for tacos, sauce and chili, or form it into patties.
Fajita Steak: a sizzling griddle or grill, a couple minutes a side until the edges char and the center hits 130F. Rest a few minutes and slice thin.
Stew Meat: brown in batches, then simmer low in stock and vegetables, or covered in a 325F oven, for two to three hours, until a cube gives with no resistance.
Thaw everything in the refrigerator the day before you cook.
