Queso Burgers

Two North 36 queso burgers off the grill

Queso Burgers

Servings: 2 · About 40 minutes


Ingredients:

2 thick patties of North 36 Farms ground beef

Kosher salt and coarse black pepper

Dill pickles

Crumbled bacon

Caramelized onions

Buns, plus a little mayo for toasting


Queso ingredients:

Half & half

Diced jalapeños

About 4 oz cheddar or American cheese

Dijon mustard

Worcestershire sauce


Method:

  1. Season the thick patties with salt and pepper, and let them rest while the coals come up.
  2. Caramelize the onions low and slow. For the queso: warm the half & half, steep the jalapeños, and melt in the cheese. Finish with Dijon and Worcestershire. No roux. It thickens as it cools.
  3. Get a cast iron skillet screaming hot over the coals. Lay the patties beef-side down so they cook in their own tallow. Press lightly, and flip once.
  4. Rest the burger like you would a steak.
  5. Build it: toasted bun, pickles, onions, bacon if you like, then a generous pour of queso.
