North 36 Prime Rib Roast

Prime Rib Roast

Servings: 12

 

Ingredients:

8 to 10 pound North 36 Farms bone in rib roast

4 Tablespoons Olive oil

3 Tablespoons Acme for North 36 Farms Superior Salt Mix

2 Tablespoons fresh ground black pepper

Horseradish sauce ingredients:

½ cup sour cream

½ cup horseradish

1 ½ teaspoons kosher salt

¼ teaspoon black pepper

 

Method:

1. Preheat oven to 450 degrees F

2. Season the roast well on all sides with Superior Salt Mix and fresh ground black pepper, and place in a roasting pan.

3. Bake at 450 degrees for 30 minutes and then turn the heat down to 325 degrees and cook for 70 to 80 minutes for a rare to medium rare internal temperature, or once it reaches 110 to 115 degrees using an internal thermometer. (Pro tip: check the internal temperature at about 60 minutes.)

4. While the roast is cooking prepare the horseradish sauce by mixing all of the ingredients together. Place into serving bowl and cover with plastic wrap. Refrigerate until the roast is removed from the oven.

5. Remove the rib roast from the oven and let the roast rest in the pan for 10 to 15 minutes.

6. Slice and serve.
