Keep the steak frozen until the day before, then thaw in the refrigerator.
How to cook
Season the steak generously with the ACME salt mix and let it come up to room temperature while the grill or pan heats up.
Get it screaming hot and sear the steak hard and fast — a couple of minutes a side — so the outside chars while the middle stays pink. Rest it for a few minutes before serving.
Assembly
Warm the tortillas over the flame until they blister and soften.
Slice the steak thin against the grain, pile it into the tortillas, spoon over the Johnson Family Salsa, and serve straight off the butcher paper.
