North 36 Farms Meatballs with Firecracker Sauce
Yield: 12 meatballs
Ingredients:
2 ¼ pounds North 36 Farms ground beef
¾ cup Panko style breadcrumbs
1 cup & 2 Tablespoons Buttermilk
½ cup shredded parmesan cheese
½ cup dried parsley flakes
3 XL eggs, yolks only
1 Tablespoon fresh chopped garlic
2 Tablespoons Acme for North 36 Farms STK Blend seasoning
1 teaspoon fresh ground black pepper
1 Tablespoon onion powder
1 Tablespoon Worcestershire sauce
1 teaspoon Cholula hot Sauce
Firecracker Sauce ingredients:
1 cup mayonnaise
1 cup sour cream
3/4 cup honey
5 ½ Tablespoons Siracha sauce
2 ¾ Tablespoons Rice Wine Vinegar
7 Tablespoons BBQ sauce
3 Tablespoons Acme for North 36 Farms BBQ Rub #103
5 Tablespoons chopped fresh cilantro
Method:
- Preheat the oven to 375 degrees with a rack in the middle of the oven.
- In a medium size bowl add the breadcrumbs and the buttermilk, allow the breadcrumbs to soak up all the buttermilk.
- Add the egg yolks, parmesan cheese, Worcestershire sauce, hot sauce, and garlic, mix well.
- Add in all the remaining spices to the mix and stir well.
- Add the ground beef into the bowl of a stand mixer, using the paddle attachment and the mixer on low, add in the wet, seasoned breadcrumbs. Mix until well combined. Alternatively, you can mix the ground beef by hand in a large bowl. Watch to be sure all ingredients are dispersed evenly throughout the ground beef.
- Divide the mixture into 30 equal parts. Roll each portion into balls between the palms of your hands. Place them onto a rimmed baking sheet. Bake for 20 to 30 minutes until browned well and cooked through. Serve with the Firecracker sauce.
- Prepare the Firecracker sauce by combining all the ingredients together in a medium sized bowl. Transfer to a serving bowl. (This sauce is also good with grilled chicken and grilled vegetables.)
